Indian Chefs win Singapore Cooking Competition
19th August 2013, Chennai: Corporate Executive Chef Sheetharam along with Sous chef Ganesh of GRT Hotels and Resorts, Chennai won the Gold Medal at International Chef Competition held at Singapore recently. The competition titled Tradition and Innovations was organized under the auspices of Singapore Tourism Board, Indian Restaurant Association of Singapore and Indian Chefs Culinary Association as a part of 10 days Food Festival held at Little India, Singapore.

chennai-chefs 6 finalist teams from 5 Asian countries participated in the competition, viz. India, Singapore, Malaysia, Thailand and Indonesia. Hotel Sahara - Mumbai and GRT Hotels and Resorts - Chennai
represented India. Based on our nomination for the competition and chefs profile, GRT was selected to participate in the competition.
Each team comprising of a Chef and a Sous Chef along with a local culinary student competed for 2 live challenges:
1. To prepare 3 course menu
2. Mystery challenge

According to Chef Sheetharam Prasaad, The challenge started with the menu planning and purchase of the ingredients at the local market within a specific cash budget.
Time allocated was 90 minutes and it was a nerve racking effort to get the correct quantity of ingredients required for our 3 course meal. The 3 course menu prepared by us included starter, main course and dessert.

Starter

Robusty shot with malai murg and tempting galoti on ulti parata and pyazi salat
(green gram smoothie with cream enriched chicken supreme and lamb mince kebab with Indian bread and onion salad)

Main course
Seafood moilee with wilted spinach, red string hopper and botanic poriyal
(shrimp coiled in fish and poached in coconut milk stew with steamed red rice hoppers and mixed vegetable poriyal)

Dessert
Spheroid-fruits jalebi tower with rabdi drizzle, mango shrikhand amidst
kesari and khubani ka meetha
(Jalebi piled with spheroid of fruits, mango infused yoghurt with nectarous semolina and stewed apricot)

Chef Sheetharam added that our meticulous planning with passionate execution was the core recipe which we trusted more than the practical one. The second challenge was
the mystery basket competition, where we were presented with 5 ingredients and we were asked to use minimum 3 ingredients and prepare the dishes. The five mystery ingredients
in our basket were chicken, lotus stem, drumstick, jackfruit and dates.

The classical food had to be cooked by the traditional method using charcoal, mud stove (sigri) and 2 mud pots within 90 minutes. The challenge was compounded by stringent rules
like using only one small knife for chopping given by them. This called for total coordination of the team and make sure that all factors like hygiene, taste, time management and perfect
presentation came together to produce the winning menu. We had to make sure the presentation looks ethnic and we tried to bring in colour combinations. The dishes prepared by our
team were Kozhi chuttathu with yelumichai saadam, kaikari mandi and served traditionally on banana leaf.

Chef Sheetharam proudly showcased the trophy and the gold medals affirming that the highest points were scored by his team in taste and presentation which is an asset of GRT Hotels
and Resorts. The jury panel comprised of Internationally acclaimed experts of World Association of Chefs Societies like Chef Rick Stephen - Asia and pacific continental Director of WACS.
Chef Edmund Toh - Assistant Vice President, Resorts World Sentosa Hotels and Casino and Chef Mahendran Chef d Cuisine- Indian Kitchen SATS, Singapore.
The judging criteria to win the competition were based on originality, ingenuity, creativity, appearance, presentation, colour scheme, professional skill, ingredients used, name, speed,
alertness and knowledge.

The Music Academy, Madras - DEVOTIONAL MUSIC COMPETITION

The Music Academy, is organizing Group Singing Devotional Music Competition under an endowment instituted by Rukmini Arts Music Trust, from 9.00 a.m onwards on Saturday, August 31 2013 at Kasturi Srinivasan Hall of The Music Academy, Madras.

Groups comprising of 3 to 10 members above 15 years including accompanist, desirous of participating may register themselves by sending particulars of their Group of and the compositions they propose to present. They will have to bring their own accompaniments and sing 3 compositions for a duration not exceeding 15 minutes.

The first two winners will be provided with cash awards and an opportunity to sing during the December season at the morning sessions

The K.S.Mahadevan Trust in association with Sri Krishna Gana Sabha,Mambalam,Chennai plans to celebrate the CENTENARY CELEBRATION of Music and Dance Critic Sri K.S.Mahadevan on Sunday August 4,2013 @ NALLI GANA VIHAR,Sri Krishna Gana Sabha,Maharajapuram Santhanam Salai,T.Nagar,CHENNAI 600017 @4:15 P.M.

The late Sri.K.S.Mahadevan was a MUSIC and DANCE CRITIC initially for THE TIMES OF INDIA MUMBAI and subsequently with his moving to Chennai wrote for THE INDIAN EXPRESS,CHENNAi ti. He was also the FOUNDER-EDITOR of the respected Music and Dance JOURNAL SHANMUKHA from 1975 to 1988.Besides being a writer on Music and Dance,Sri.Mahadevan played important roles in Institution building, mentoring young talents-- many of whom have become front=ranking performers.Sri Mahadevan also participated in Talk shows/discussions in AIR/DOORDARSHAN besides presenting Papers during varous symposia and conferences held in various parts of India.

Sri Mahadevan also enjoyed warm relationships with Members of the Music and Dance Community.

Sri Mahadevan died in 2006 @ the age of 93. He has written and published a book MUSINGS ON MUSIC AND MUSICIANS in 2003.


The program is due to start with a mini concert by Aswath Narayanans(Vocal), accompanied by Sri.Raghul(Violin) and Kumbakonam Sri.Ramakrishnan(Mridangam). This will be followed by the lighting of the Lamp by Dancer Dr.Padma Subrahmanyam and release of the book on Sri.Mahadevan's brief biography by Dr.Nalli Kuppuswamy Chetti. The book covers his writings and reminiscences by artistes.The first copy will be received by Sri.K.Balaji Director,Kasturi & Sons Ltd.

This will be folowed by Felicitations by Dr. Nalli Kuppuswamy Chetty , Dr.Padma Subrahmanyam, SriP.S.Narayanaswamy and others thro Video.
The program will end with a Concert by Dr.Nithyasree Mahadevan and party.

SOLAR POWERED CAR

Energy - Demand is one of the major threads in our country. Finding solutions, to meet the energy demand is the greatest challenge for Social Scientist, Engineers and Industrialist of our Country. Now-a-days the concept and technology of employing renewable energy becomes very popular in various day to day applications. Sunlight is considered to be a source of energy which finds applications in Automobile Sectors to reduce the consumption of fuel and environment friendly. With the help of this technology, a conventional car is designed and modified to make solar energy powered car.
solar-car The solar vehicle is a step in saving these non renewable sources of energy. The basic principle of solar car is to use energy that is stored in a battery during and after charging it from a solar panel. In this project, an used Maruthi 800 cars engine is replaced by a D.C electric motor of 4 kW. A 12 V with two number of 150 AH batteries are used to charge the D.C motor which serves here as an engine and moves the vehicle in required speed. Voltage regulator is connected to accelerator pedal of the car. It is used for regulating current to vary the speed of the motor. The batteries are charged by two 120 W solar module which is mounted on the roof of the car. The motor is connected to the front wheel of the vehicle through the existing gear box which is used to vary the speed of vehicle. The car has been successfully tested for various road conditions.

Mainly passenger vehicles are on short distance operation in urban conditions. Using a battery to run the vehicle incorporated with solar energy is much cheaper than either petrol or diesel. The vehicle is pollution free and does not emit toxic exhausts that are harmful to earth. The vehicle runs smoothly without noise thereby reducing noise pollution. The vehicles thus serves an a alternate for the depleting fossil fuels.This technology is most suitable for energy alternate using devices. The people who wish to travel can accept this proved technology for implementation. Moreover the same technique and technology can also be extended for all types of Automobiles in the transportation sector.
